The blossom is out in Quay Street today. The prunus trees are like sentries in a line, standing straight and indefatigable, covered in pink pompoms of flowers.

Almost every week, I read Diana Henry’s column in the Telegraph and say, I must cook that. This salad lived up to expectations. The vibrant red of the roast tomatoes contrasts against the creamy green smoothness of avocado and the lime in this salad bring a cheerful zing to lunchtime. I used Lane Farm semi dried chorizo company’s which is produced at Brundish, near Framlingham. I substituted rocket for spinach and cooked red and white quinoa and bulghur wheat that I bought from Waitrose.
