Sometimes I try a recipe and it doesn’t work or it’s all right but nothing special. But then sometimes I make something and think, oh my goodness, this is it. That’s what happened in my quest for a banana bread recipe as I had tried a few and wasn’t that impressed but then I made this one and couldn’t stop eating it. It’s from the Avoca cookbook, a cafe in Ireland but I found the recipe in one of Darina Allen’s letters on the Ballymaloe website. It would be a simple wet weather recipe for a child to do. You could easily leave out the nuts if you are allergic to them.
