The last week of May

Ron has a stall at the end of the High St on Thursdays, Fridays and Saturdays with bowls of fruit and veg for a pound.  There isn’t a local greengrocer’s shop but Ron inspires what I make each week.

After seeing Nigella Lawson tweet the first dinner that she cooked after her Australian and New Zealand book tour, everyone pleaded for her recipe for chicken in a pot with lemon and orzo. It was comforting and warming and as there were just three of us, there was lots of chicken left over.

I made chicken couscous salad for lunch boxes, adding multi coloured tomatoes and cucumber with  basil and  chives from the garden.Chicken couscous salad

I went back to Diana Henry’s, ‘A Taste of Peach’ for courgette, ricotta and pecorino fritters, served with more of Ron’s tomatoes.

As I was looking for the recipe, I came across the one for griddled courgettes with burrata and fregola and so we ate that another night.

A rhubarb and apple crumble finished off the week.
